Easy Dinner

There are days that just go by so quickly that when dinner rolls around I am often standing in the kitchen wondering what I can make that will be quick, easy and healthy. One of my go to favorites to make that B loves to eat is Chicken Salads.

The steps are pretty simple and I am sure everyone has made this before.

I salt, pepper and season my thawed out chicken. Currently my favorite is Tone's Rosemary garlic seasoning that I found at Sam's Club.


I put my seasoned chicken onto my grill and let it cook through. While it is cooking I will prep my salad mix. Chopping up the vegetables and cooking some corn. 


When the chicken is finished cooking, a process that takes just a few minutes. I chop it up into small pieces. 


I throw everything into a bowl add my favorite dressing or none at all and enjoy. From start to finish it takes maybe 15 minutes. If that! The best part is I always throw an extra piece of chicken on the grill and will have some for a healthy and easy lunch the next day. Which is perfect for taking to work because you don't have to heat the chicken up again.



I told you it was simple! B loves it and often asks for it for dinner. I would happily eat it everyday if I didn't think the husband would get sick of it. So what are some of you go to favorite easy dinners?
